Today we’ve got new stock in from Signatory Vintage. The sought after cask strength collection including a new Glenlivet matured in a single Oloroso Sherry cask. The unforgetable Un-Chilfiltered Series, which includes whisky from Ben Nevis Distillery, Dailuaine Distillery, Linkwood Distillery and many more. There’s also a delicious new heavily peated Staoisha added to this collection. The new 100 Proof collection from Signatory Vintage is here too. Signatory bottled at 57.1% alc/vol and matured in sherry casks, these are amazing value and now sought after through America and Europe. We’ve also got our hands on a small allocation of small batch release Signatory from Mortlach and Craigellachie. These whiskies can’t be missed.

Signatory Vintage are an independent bottler founded in 1988 by Andrew and Brian Symington. The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found.
Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength. To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced.Signatory Vintage’s aim is to offer as wide a range of whiskies as possible, some of which are not even bottled by the proprietary distillery. This allows malt enthusiast to sample the huge variety of subtle differences which occur between casks.
In 2002 Signatory Vintage expanded their business operations by acquiring the Edradour distillery in Pitlochry from Pernod Ricard. For what is one of the smallest distilleries in Scotland, Signatory manage to produce a huge variety of Edradour bottlings, including a vast selection of Straight From The Cask finishes, as well as a heavily peated Ballechin.

Our Tasting Notes
Nose: The smell of sweet and dark sherry takes hold. Summer berries of cranberry, strawberry and raspberry mingles with honey sweetness. Raisins and figs with soft oak.
Palate: Sherry notes and clove, raisins and figs. Some dried dates and hints of citrus, perhaps mandarin.
Finish: Medium length, plenty of sherry notes, cafe latte and orange peel.

Our Tasting Notes
Nose: Sour cherries, malty, dark chocolate, hints of raspberry with some spicy oak.
Palate: Cherries, raisins, floral notes of heather, white chocolate, hints of red fruits and freshly cracked black pepper.
Finish: Medium to long, dried dark fruits with cinnamon, oak and spicy notes.

TheBraeval Distillery sits in high pasture land, remote and sheltered. Because of this, illicit stills were common in the area for many years. The distillery was formerly known as Braes of Glenlivet and changed to Braeval in 1994. Did you also know that Braeval is Scotland highest distillery!
This single malt whisky was distilled in 2000 at the Braeval distillery in the Scottish Speyside whisky region. It was matured solely in a refill Oloroso Sherry Butt and in 2023 was bottled at 60.4% alc/vol as part of the Signatory Vintage cask strength range. This whisky has no added colouring and was limited to 603 bottles.
Our Tasting Notes
Nose: Dried tropical fruits, freshly made toffee, crisp ripe red apples, soft clove and hints of lime citrus.
Palate: Orchard fruits of pear and apple, hints of peach, Manuka honey, baking spices and creamy caramel
Finish: Long with tropical fruits and oak spice.
